Rice Noodle Bowl
with Sauerkraut and Peanut Sauce
Ingredients for the Bowl:
(for 2 servings)
150 g rice ribbon noodles
1/2 broccoli
2 carrots
1/3 zucchini
6 tbsp sauerkraut
1/3 cucumber
1 block smoked tofu
Ingredients for the Sauce:
Preparation:
1. Mix all ingredients for the sauce together until creamy.
2. Cut broccoli, carrots, cucumber, smoked tofu, and zucchini into bite-sized pieces or sticks.
3. Cook the rice noodles according to package instructions.
4. Quickly fry broccoli, carrots, zucchini, and smoked tofu until golden brown.
5. Combine the rice noodles, sauerkraut, cucumber, vegetable-tofu mix, and sauce on a plate and enjoy!
